We look at the composition of foods, down to the molecular scale, to understand how best to process and store them to deliver safe, high-value products to markets around the world. We use our knowledge of the consumer to design new products with high appeal and understand their nutritional and functional benefits. We develop methods to identify and extract functional ingredients from biological resources with minimal waste.
